Giorgos Provias is the man who created the choreography for Zorba's dance, later becoming famous as "sirtaki". Sirtaki is actually a simplified version of "hasapiko", a traditional Greek dance. Unfortunately, Provias didn't appear in the film and wasn't even mentioned in the credits, due to a financial issue.
